Waterkloof Circle of Life White – This wine has a medium weight among its peers and offers both intensity and power. The nose displays notes of ripe apple, pear and honey. The palate carries some acidity as well as length. This wine should match many dishes, but we enjoy it with a prawn risotto the best.

Waterkloof is a boutique wine estate that grows organic and biodynamic products. We produce compost and microbial preparations, use draft horses instead of heavy tractors, and our practices result in looser soil with more life for the vines to explore. These practices help to produce honest terroir-driven wines that are 100% made in the vineyard.
History of the Waterkloof Circle of Life White Wine
Waterkloof Vineyards has always sought to get a better understanding of each of the individual vineyard blocks around our South African estate. The Circumstance range focuses on showcasing these individual varietals, while Circle Of Life highlights all the varying terroirs and grape varieties found on the property. For this reason, rather than trying to create a wine that fits within a traditional style like Bordeaux or Rhône blends, we have instead produced two wines devoid of specific varietals or vineyard blocks. Instead, they are reflections of both the totality and philosophy behind Waterkloof.
The Wine Making Process for Circle of Life White Wine
One of the most important parts of the wine making process is tasting. Early morning grape picking results in cooler fruit and helps preserve their fresh, natural flavors. Our gentle basket press is used to squeeze out juice from whole bunches without adding enzymes or settling agents to the final product.
Circle of Life White Wine – The Growing Season
Waterkloof started harvesting on January 29th and the harvest reached full intensity by February 5th. Thankfully, we had some great weather from February to May. The conditions were favorable with not too much rain and only a few very hot days. This made it easier to harvest the whites over a two week period and then follow up with the reds immediately after. Of course, harvest dates were determined based on taste in the vineyard, waiting to achieve an ideal balance between ripeness, potential alcohols and acids. There was some variation, but you saw an increase of approximately 10% on last year’s production, which is better than we expected.
