Vineyard Information
Our Clairette Blanche grapes come from the Breedekloof region in South Africa. The vines are an impressive 41 years old and grown on Jacques root stock, using a bush vine trellis system. The soil type is a blend of Longlands and Westleigh, and the grapes are irrigated using overhead irrigation.
Harvest Information
Our grapes are hand-picked in the early morning to ensure optimal ripeness and quality. The yield is between 0.9 and 1.5 tons, with the harvest taking place in March when the grapes reach a sugar level of 22.5ºB.
Vinification – Daschbosch Avon Clairette Blanche
Our winemakers are dedicated to producing the best possible wine, and our Clairette Blanche is no exception. After being whole-bunch pressed and settled for 24 hours, the grapes are racked to 4th fill French oak barrels for further fermentation. The wine is then aged for six months with regular ‘bâtonnage,’ which creates a beautiful texture and mouthfeel. Finally, the wine is racked from the thick lees with sulphur added and aged in the same barrels for a further 2-3 months.
Chemical Analysis
Our Clairette Blanche has an alcohol content of 13.37%, a residual sugar level of 1.36g/l, and a total acid content of 6.46g/l. The pH level is 3.22.
