Black Granite Shiraz by Darling Cellars
From unirrigated bush vines in strategically selected sites, Darling Cellars’ Black Granite Shiraz enjoys deep soils from decomposed granite.
TASTING NOTE
This is a remarkable Shiraz with an expressive nose and great complexity. Fruits such as pomegranate, strawberries, vanilla, white pepper, bright red fruit together with a hint of smokiness will meet you on the nose. A medium bodied wine with plush structure and fruit following on to your palate with a lingering aftertaste. Good balance between fruit and wood.
VINIFICATION DETAILS
All grapes were hand harvested, crushed and de-stalked prior to fermentation for 5-10 days at 24-26°C. After completing malolactic fermentation in tank the wine was racked to 2nd and 3rd filled barrels and
stainless steel tanks with a combination of French and American oak staves for 8 months to add structure and complexity

Darling Cellars Reserve is a wine range of straight varietals where the focus is on fruit driven, varietal true, value for money wines.
The Darling area historically is a dairy area and only the last 10 – 15 years, grape growing has come to the fore. Renowned for its wild flowers, it is one of the Western Cape’s most diverse areas. The Darling Wildflower Society was founded in 1915 with an annual show in September.
The area was used during the 18 hundreds by the government of the day to fatten their cattle, as the area had large plains of natural grass. The traditional produce was game, salt and butter.
These days an abundance of businesses thrive in Darling. Wine, dairy, baskets, olives, sand and water are some of the industries which, along with tourism, makes Darling tick along.
